King Louis XIV, or Lodewyck XIV, as he was known in Holland, was passionate about the finer (some would dare say, finest) things in life. He loved food, and commissioned his kingdom’s best chefs to expand the boundaries of gastronomy for both his personal pleasure and as a tool of political persuasion.
His culinary exploits, spearheaded by his expert chefs, and his constant desire to expand the boundaries of his kingdom directly led to the little croquette becoming a huge part of Amsterdam’s food culture.
Today, Lodewyck continues in the footsteps of Lodewijk the XIV by carrying the flag of Amsterdam’s unmistakable gastronomic culture for all the world to see, and taste.
